Quinoa Veggie Power Bowl

A balanced bowl of fluffy quinoa, roasted veggies and healthy fats.

Ingredients

  • 1 cup cooked quinoa (from 1/3 cup dry)
  • 1 cup roasted sweet potato cubes
  • 1 cup baby spinach
  • 1/2 cup chickpeas, drained & rinsed
  • 1/2 avocado, sliced
  • 1 Tbsp pumpkin seeds
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp fresh lemon juice
  • Sea salt & black pepper

Instructions

  • Cook quinoa according to package, fluff and cool slightly.
  • In bowls layer spinach, quinoa, sweet potato and chickpeas.
  • Top with avocado slices and pumpkin seeds.
  • Whisk olive oil, lemon juice, salt & pepper; drizzle over bowls.
